Summer summer summertime, Time to sit back and unwind! If you read my 2018 Summer Bucket List then you know that making fresh lemonade was on there...however with a twist! One of my favorite spots in San Diego, Por Vida, makes a Spicy Sandia Limonada that is DELICIOUS! I attempted to make a similar version at home and it turned out pretty tasty. Let's do this... What You'll Need: Serves 20 (9oz cups) 1 Large Watermelon - how to pick a sweet watermelon HERE 8-10 Lemons (2 cups of lemon juice) - how to pick the best lemons HERE 1 1/2 cup White Sugar Vitamix (or any blender) Lemon Squeezer Measuring Cup Tajin First step, we need to make the simple syrup for the lemonade. In a small saucepan, combine sugar and 1 cup water. Bring to boil and stir to dissolve sugar. Allow to cool to room temperature. Then squeeze lemons to make about 2 cups. Then add 8 or more cups of water (you'll need to taste to your liking). Set aside some lemon juice for the rim of the cups. Next, chop up your watermelon and place in Vitamix with a little bit of water. Mix until you get a liquid consistency. Pour over a strainer twice to remove the pulp (this is key). Then place Tajin in a bowl, dip your cup rim in lemon juice then in the tajin bowl. Add ice to the cup, fill half the cup with lemonade and the other half with watermelon juice. Sprinkle more tajin inside the cup as well, serve with a lemon slice and you are done! It was yummy, refreshing and smelling the lemon & watermelon was so nostalgic to my childhood summers.
